Red Lentil Soup
Red lentil soup is a quick but filling soup dish. I try to do a soup and salad day once a week and this is a reoccurring favorite in our home. At times I'll even double the recipe and use the left overs for lunch the next day.

Red Lentil Soup
Ingredients

½ onion
·
1 cup red lentils
·
2 tablespoons rice
·
6 cups water
·
1/2 tablespoon butter
·
1 tablespoon diced garlic or 3 garlic cloves
·
1 tablespoon coriander
·
1 teaspoon red pepper paste
·
1 tablespoon cumin
·
Salt to taste
·
1/4 cup of lemon juice
Directions
- Saute
½ onion in olive oil
- Bring
red lentils, rice, and water to a boil in a pot.
- Once
boiled, place on low fire to simmer and skim any white foam that formed on
the top.
- Allow
to simmer until the lentils and rice are tender.
- In a
separate pan sauté in butter the garlic, coriander, and red pepper paste.
- Once
light brown add to the soup.
- Add cumin, lemon and salt to the soup as well.
- Allow
to simmer without the lid for 45 minutes.
- Stir occasionally
as to be sure the lentils and rice do not stick to the bottom of the pot.
